The Stubborn Mule

The Stubborn Mule will be offering:

Three (3) courses for $30

  • Choice of Appetizer
    • Shrimp and Chorizo Skewer – pan seared shrimp and spicy chorizo with chipotle white BBQ and pickled red onions
    • Edamame – garlic honey sambal
    • Stubborn Bruschetta – house made ricotta cheese, spinach almond pesto and brushcetta tomatoes, served on grilled focaccia bread
  • Choice of Entree
    • Tuna Bowl – mirin-soy gastrique marinated and cubed ahi tuna, edamame beans, cucumbers, pickled red onion, diced tomato, avocado, wakame salad and crispy wontons finished with a garlic sambal drizzle served over spring mix
    • Mahi Tacos – Three (3) grilled flour tortillas, blackened mahi, shredded lettuce, tomatoes, citrus garlic cilantro slaw finished with chipotle white BBQ drizzle
    • Cuban Mojo Chicken – grilled mojo marinated chicken breast over cheesy chorizo risotto, chilled roasted corn and black bean salad served with garlic sambal
  • Choice of Dessert
    • Peach Cobbler – granola crumble, vanilla bean ice cream and caramel sauce
    • Cronie – croissant-donut dusted with cinnamon and sugar. topped with vanilla-bean ice cream, drizzled with caramel sauce
